I'm back with another recipe and this is my creamy sausage pasta. You want to start by boiling your pasta. I'm using rigatoni. You then want to chop up one shallot or onion and two garlic cloves. You want to get these as fine as possible. I found this herby fennel sausage crumb from Waitrose. But you could just use normal sausages and just break them up. I gave them a fry on a high heat and added some mixed herbs, paprika, and salt and pepper. Once your sausage is cooked and it's looking nice and crispy, you want to add in your shallot. You want to fry that off for a few minutes and then once it's translucent, add your garlic. Once your garlic smells wonderful, you want to add about 200ml of white wine. You want to let that all simmer. I grated some fresh parmesan and just measure with your heart. This will look a little bit crazy when you first start mixing it, but once you add your double cream, it will all come together. Once the sauce is all combined and it's simmered, you want to add in your pasta. You want to make sure you get in a little bit of your pasta water in there and you want to cook it till almost all of the liquid is gone. I added some fresh parsley and here is the final dish.
