This is my favorite chicken soup recipe and I'm finally sharing it with you. This soup will genuinely blow your mind. I would eat it every day if I could. You want to start by searing your chicken and adding a tablespoon of each of the seasonings you see here. While the chicken gets brown, you want to chop up an onion and a pepper. Add those to the pan and give it a good mix. Next, chop up three carrots and three potatoes. I had some green beans left over so I added those as well. Hop those to the side and we're going to chop some garlic and the white of the spring onion. Keep the greens to the side. Add spring onion and garlic. Let it cook for a second and add your other veggies. I added two liters of homemade stock and a little bit extra of a cube because I didn't have enough. You don't have to use homemade, just make sure that your veggies are covered. And next, add some fresh thyme. You can use dried. Add the scotch bonnet, grate a ginger and lemon zest. Give it a good mix, and you want to let this simmer for at least two hours. After two hours, remove the thyme if you're using fresh. I like to keep my scotch bonnet in for extra heat. Your chicken should be falling off the bones, so just take those out. Add about two tablespoons of chicken gravy. Add your green spring onions and give it a taste and salt it.
