Wait, y'all tell y'all this buffalo chicken dip is only about 220 calories with 27 grams of protein per serving. I started with a pound of rotisserie chicken breast, shredded with the skin removed. Then for the creamy base, I weighed out 225 grams of 2% cottage cheese, 120 grams of plain Greek yogurt and 4 ounces of Neufchatel cheese. And before anybody comes for me, yes, we are blending the cottage cheese, you will not know it's in there once it's smooth. Then I added my Dino Ranch mix, Kinders, the blend, and Frank's Red Hot and blended it until all well combined. Then I'm going to pour that all over your shredded chicken and mix it together well. Next, we're gonna add 85 grams of shredded mozzarella and Provolone into the dip. And if y'all want to judge my skillet, y'all can send me a new one because she may not be pretty, but she stays working. Next, we're going to mix all that together, spread it out, and then I topped mine with another 45 grams of cheese. Was that more cheese than I originally planned? Absolutely not. Are we gonna worry about it? Absolutely not. I added another little drizzle of Frank's on top with some Kinders and parsley. Then popped her in the oven at 375 for about 20 to 25 minutes. And so everything was hot, bubbly, and melty. Everybody else ate theirs with potato chips because apparently potato chips with buffalo chicken dip are unacceptable in this household. This would be perfect to throw together for football season. And since we're talking football, roll tide. High protein, stupid easy, and the whole family ate.
